Prof Elna Buys has just returned from Valencia, Spain where she spent five months at the University of Valencia. She received a fellowship from the University of Valencia to do research in the Faculty of Pharmacy.
She worked closely with Dr. Jordi Mañes i Vinuesa, Head of the Department of Preventative Medicine, and Dr Houda Berrada, both are specialists on mycotoxins. The focus of her research was microbiological risk characterisation of apple juice concentrates. As both Spain, in particular Valencia, and South Africa have a vested interest in exporting fruit, this project was of interest to both countries.
During her time in Spain she also visited Prof Mieke Uyttendaele from the University of Ghent to present a lecture on “Water Quality and its Impact on Food Safety” at their International Training Programme on Food Safety.
